He is one of the most famous winemakers to have changed the history of Italian wine, and has been called "one of the greatest noses in the world" by the wine press Civilta delbere.

His greatest gift lies in his sense of smell and unusual sensitivity, enabling him to capture the essence of a wine and comprehend its soul.

He is known as an artist of vintage white wines .

In the 1960s, perhaps the grayest time for Italian wine, when his winemaking adventures were just beginning, he was able to identify casks of exceptional quality in Adige's cooperative cellars, and the wines bottled by him under the Bellendorf label have become legendary.

His masterpieces brought prestige to Pinot Blanc, of which extraordinary vintages still exist, and the legendary Russian-American winemaker André

Tchelistcheff, who fell to his knees while tasting his wine in Florence, swore from it was the best wine he had ever tasted.

Grai has had one of the most profound impacts on the history of Italian wine, for example with Ampelio Bucci, marking Verdicchio's redemption and rebirth after years of commercial drift.

From Piedmont to Puglia, from Tuscany to Lazio, he helps, assists, contributes ideas and sponsors wine producers in all regions.

But above all in Friuli, where he created and produced wines for Marina Danieli, who became his lifelong companion. Together they made Villa Della Signoria a cultural center, not just for food and wine.
